Recently I was invited to an event that was the perfect match for a kombucha lover like me: a food and kombucha pairing at Flax & Kale Passage. Have you been there yet? It might just be my favorite Flax & Kale, because of its coziness and also because the restaurant is 100% gluten free.

The event was not just a one-off: It was the launch of a kombucha food pairing menu that will be available for groups of 6-10 people on request. You can choose a fully plant-based menu, or the standard menu that also includes fish. You can also choose if you at the end of the experience would like your own kombucha starter kit, that comes with a scoby, started liquid, tea and sugar, all necessary ingredients when you want to brew your own kombucha at home (it’s not as complicated as it might seem, I promise!)

The pairing takes place in a separate room, it is actually inside the kombucha lab in the restaurant. You are sitting amidst big tanks and kombucha scobies on the shelves, it is very exciting. Our host for the evening was Mar Barri, the daughter of owner Teresa Carles, who now has the role of quality control of the kombucha. She was very interesting to listen to, as she told us all about the process of the kombucha brewing, insights into the restaurants and she also presented the foods that were served.

First we received a welcome cocktail which was one of the kombuchas in their new line. This one was the Blue Mojito Kombucha with yuzu, mint and spirulina. I don’t want to give away all the dishes we devoured during the tasting menu, but a few of my favorites were without doubt the Kingfish sashimi with ponzu, the plant-based oyster and the BBQ jackfruit bao paired with the Spicy Chai kombucha. One of the desserts was actually a sorbet made out of kombucha, so good and refreshing.

If you aren’t familiar with kombucha it is a sparkling drink that has been made by fermenting tea (usually black or green tea). Fruit or herbs can be added to give it different flavors. Kombucha is also associated with many different health benefits. I’m a huge addict!
