Fat Veggies - Playfulness with Vegetables
Fat Veggies takes the love for vegetables to a whole new level. If you weren’t familiar with all the wonderful things you can do with vegetables, you will find out when you are presented with the menu. For me, it was love at first sight.

The restaurant is exactly as cool as you would expect at first sight. The space is beautiful and gives a cabin kind of vibe. Fire is in focus here, with all the vegetables, fermenting, pickling, and more.

The menu here is nothing like you’ve seen before. It’s playful and innovative, and what I particularly liked is how they take advantage of every part of the vegetable. On our visit, the roasted beets came with crunchy beet leaves (and a tasty home-made labneh), as did the cauliflower (with a side of cauliflower and white chocolate purée), also making use of the leaves. The miso flan was the perfect finish for a great meal full with surprises.

The chefs here have a passion for vegetables and endless creativity when it comes to how to present them. The barbecue and smoker are protagonists, but fermentation is also an essential aspect of it. I loved their home-made ginger ale, and their different-flavored kombuchas are also excellent.

I welcome Fat Veggies with open arms, and I’m hoping that the rest of the city will too. This is a wonderful new concept where vegetables are the protagonists. If this were NYC it would have queues, and I hope even the most hard-core carnivores will see what a gem this is.
