La Consciente - Gluten Free, Vegan, and Organic Bakery
La Consciente is a gluten-free and vegan bakery, and it is pretty fantastic. They make very, very good gluten-free bread in numerous varieties, and sweets such as cute donuts without refined sugars, additives, or animal food products. And they serve specialty coffee!
The team here is incredibly friendly and will help you pick out the options that suit you best. Their black breads (my favorites) are made with black rice, gluten-free oats, sorghum, tapioca starch, psyllium, water, salt, and sourdough. No funny business in the ingredients, as you can see. The loaves are heavy and last for many days, and you can also cut them and put them in the freezer if you wish.
The breads have that wonderful sourdough moistness to them, and I’ve heard so many say they can’t believe it’s gluten-free (and vegan), and it’s true: it’s just as delicious as any bread from any great bakery in the city. Some of the loaves also have rice protein for better texture.
They also have buns, baguettes, granola (without refines sugar), brownies, cookies, donuts, energy balls… And all of the ingredients are organic. They keep experimenting with new and seasonal things constantly: you’d be surprised with all they’re capable of!
