Publico - From Raw to Grilled, Every Dish Tells a Story

Público, located on the bustling Enric Granados, is quite the surprise. The entrance is small and might go unnoticed, unless you peek in through the window and catch a glimpse of a table of fresh fish and chefs hard at work preparing dishes.

The space is large, but manages to feel cozy. It’s divided into several distinct areas, which means it’s perfect for whichever company you’re bringing on your visit: an intimate date night, a group of friends, work colleagues from out of town, or when you’re celebrating something with the family.

Chef Edgar Martinez Custodio runs a tight ship at Público. He has been named one of the best new chefs in Spain by Food & Wine, and when you have a taste of his talent, you surely understand why. He picks the best ingredients, and transforms them into inventive creations, bound to charm both locals and visitors.

You’ll find classics on the menu, such as hand-made croquetas with various fillings, including slow-cooked stews. Some plates have a playful touch, while paying homage to traditions, and top-notch ingredients at hand. If seafood is your preference, you’ll be presented with the catch of the day for you to pick, and also seasonal highlights like morels, peas, and more.

Some standouts from our first visit included the classic gilda and the oysters - Chef Martinez’s personal favorite variety. From the raw section of the menu the steak tartar is highly recommended and a very popular item: it’s served on smoked brioche with cured egg yolk and it is very addictive. The tuna with orange and almonds, together with cava pearls is also quite an experience. Their version of the Caesar salad is also a highlight and great to add something light to your order (the dressing is incredible!), and the truffled potato parmentier with foie gras is true comfort food.

I highly recommend the tables around the open kitchen, where you can see all the mains being prepared: the meats and fish grilled right in front of you. The grilled turbot with Meunière sauce, Jerusalem artichoke cream, and crispy garlic is delicious, the meat options are also noteworthy, and there’s also paella should you be craving it.

The restaurant is also famous for its wine selection. With more than 200 wines to choose from (they’ll hand you an iPad to pick from), and no less than 35 wines by the glass. The sommelier will be more than happy to guide you and find the right one for you. If you fall in love with one you can buy it to take home with you.

Público checks all the boxes: great service, beautiful interiors, the wines interesting, and the food perfectly and skillfully prepared. It’s truly manages to suit any kind of occasion which is not an easy task.
